1st course - Appetizer
Petit Beef Wellington
Tender cubes of Beef Filet seared and topped with a mushroom, shallot & cream paste then encased in delicate flaky puff pastry, baked until golden & served with a rich Marchand de Vin Sauce.
2nd course - Soup
Oyster and Artichoke
Artichoke Hearts simmered in a rich creamy sauce with fresh Louisiana Oysters, sprinkled with house made seasoned croutons.
3rd course - Salad
Hearts of Palm
Tender hearts of palm, thinly sliced red onions, cherry tomatoes & black olives, with a Cilantro Vinaigrette dressing.
4th course – Entrée
Lobster Thermidore
A traditional French Béchamel composed of a light roux with cream & cognac, sauteed with pulled & diced lobster meat, stuffed into its tail, topped with Parmesan-Reggiano cheese, then baked.
Served with roasted Asparagus Spears wrapped in lemon wheels.
5th course – Sorbet
Ruby Sorbet
A lovely deep garnet sorbet composed of citrus juice and cinnamon & sugar, which is both sweet & tart.
A perfect cleanser to precede dessert.
6th course - Dessert
Red Velvet Cheesecake
A traditional cream cheese cake set atop a crushed Oreo cookie crust, topped with a white cream cheese icing & drizzled with Chocolate Ganache.
